Baked Chicken and Vegetables
I just sorta threw this together one afternoon to use up a bunch of random stuff I had laying around. It turned out pretty well, considering the lack of planning.
Ingredients
- 3 chicken thighs with leg attached, skin removed
- 3 chicken breasts
- Dry rub (I used leftover rub from Calgary Stampede Ribs, which gave it a spicey kick)
- 1 1/2 cup cooked rice
- 1 1/2 cups water
- 5-6 large potatoes, cleaned and cut into quarters
- 4-5 stalks of celery
- 1 onion, cut into large pieces
Directions
- Apply the dry rub liberally to the chicken.
- Grease a 9x13 glass pan. Fill the bottom with cooked rice. Pour water over the rice and then place chicken on top of rice.
- Arrange vegetables on top of chicken. Cover with aluminum foil.
- Bake in oven at 450°F for 60 minutes. Use a thermometer to make sure the chicken gets cooked to 180°.
- Serve up with some bread for a tasty meal.
The bread in the picture is parmesan bread.
