Start your day off right with this classic breakfast. It's a lot easier then you might think to make pancakes from scratch and they're super tasty.
- 1 large egg
- 1 cup flour
- 1 1/4 cup milk
- 1 tbsp sugar
- 2 tbsp oil
- 3 tsp baking powder
- 1/4 tsp salt
- 1/2 cup fresh blueberries (don't use frozen)
- Maple syrup
- Confectioner's sugar
- Whipped cream
- Additional blueberries
- In medium bowl, mix egg, flour, milk, oil, baking powder, and salt until smooth. Add in blueberries.
- Heat skillet to medium. For each pancake, use approximately 1/4 cup of batter. Flip when bubbly on top (approx. 2 minutes).
- When all pancakes are done, stack on plate. Drizzle with maple syrup. Dust with confectioner's sugar. Top with whipped cream and blueberries.
