Broccoli Mushroom Salad
This is super easy and has a couple good flavors mixed together. I never would have suspected that broccoli and mushrooms worked so well together before trying this recipe.
Yield: 5 servings
- 5 cups broccoli florets
- 1 lb. sliced mushrooms
- 8 cook bacon strips, crumbled
- 1 1/4 cup shredded parmesan cheese, divided
- Fill a large skillet with 3 cups of water. Cover and bring to a boil. Add the broccoli and cook for 3 minutes. Drain and place broccoli in cold water.
- Toss the broccoli, mushrooms, and 3/4 cup parmesan together until well mixed. Sprinkle remaining cheese on top.
- Serve and enjoy.
