Oatmeal Coconut Butterscotch Cookies
I had an itch for something butterscotch and this is what I came up with. Unlike many oatmeal cookie recipes, these are soft and chewy (the way cookies were meant to be).
Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 cup packed brown sugar
- 2 eggs
- 1 tsp vanilla
- 1.5 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 cups quick cooking oats
- 6 oz flaked, sweetened coconut
- 12 oz butterscotch chips
Directions
- Cream butter and sugars. Add eggs and vanilla, beating well.
- In separate bowl, combine flour, baking soda, baking powder, and salt. Gradually combine both mixtures.
- Stir oats, coconut, and chips. Mix well.
- Drop by tablespoon fulls onto ungreased cookie sheet.
- Bake at 350º F for 8-11 minutes.
- Cool on wire racks.
