Peach Upside-down Cake
This is basically just a pineapple upside-down cake with peaches substituted in for the pineapple? It's a pretty tasty dessert, so I hope you enjoy the recipe.
Ingredients
- 1/4 cup butter
- 2/3 cup packed brown sugar
- 3 peaches, skinned & sliced
- 1 1/3 cups flour
- 1 cup sugar
- 1/3 cup shortening
- 3/4 cup milk
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 egg
Directions
- Heat oven to 350ºF.
- Place butter in 9-inch round pan and melt in oven. Remove from oven and sprinkle with brown sugar. Arrange peach slices on top. Set aside.
- In mixing bowl, combine all remaining ingredients. Pour over peaches.
- Bake at 350ºF for 45-50 minutes, until toothpick comes out clean.
- Immediately place heatproof plate on top of pan. Flip over and let pan sit on top of plate for a few minute to let the sugar drizzle out.
- Serve warm. Top with whipped cream if desired.
