Red Velvet Cake
A friend of mine was graduating from med school and asked if I'd make a cake to celebrate. Red velvet cake was the request, so I looked around and found this recipe.
Ingredients
- Cake
- 1 cup butter, softened
- 1 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla
- Red food coloring
- 2 1/2 cups flour
- 2 tbsp baking cocoa
- 2 tsp baking soda
- 1 cup buttermilk
- 1 tsp vinegar
- Frosting
- 1 package (8 oz) cream cheese
- 1/2 cup butter, softened
- 3 3/4 cup confectioner's sugar
- 3 tsp vanilla
Directions
- Cream butter & sugar. Add eggs, vanilla, and red food coloring.
- In separate bowl, combine flour, cocoa, & baking soda.
- In separate bowl, combine buttermilk & vinega.
- Alternately combine flour and buttermilk mixtures into butter mixture until well mixed. Pour into three greased & floured 9-inch round baking pans.
- Bake at 350ºF for 15-20 minutes.
- For frosting, combine all ingredients in mixing bowl. Beat until smooth and well blended. Spread between cake layers, top, and sides.
