These rich mashed potatoes are full of cheesey goodness and will be a welcome addition to any meal.
Yield: 4 servings
- 2 lbs. potatoes
- 2 tsp salt
- 15 oz. ricotta
- 1/2 cup whole milk
- 3 tbsp butter
- 1/2 tsp black pepper
- Peel potatoes and cut into large pieces. Boil in water until tender (about 20 minutes). Strain off excess water.
- Combine cooked potatoes with all remaining ingredients. Mash together. Scoop into four 10 oz. ramekins.
- Set the oven to broil. Place in the oven and broil until browned (3-5 minutes). Serve hot.
