If you're looking for a way to spice up the scene and avoid the same boring, plain potatoes, then try these seasoned potatoes. They've got a lot of flavor and look fantastic.
Yield: 4 servings
- 1 lb red potatoes, cubed into bite-sized pieces
- 1 cup arugula
- 1 tbsp dried basil
- 2 tbsp feta cheese
- 2 tbsp chicken stock
- 1 tbsp oil
- 1 tbsp lemon juice
- 3/8 tsp salt
- 1/4 tsp pepper
- Place the potatoes in a large pot and cover with water. Bring to a boil and boil for 9-11 minutes, until tender.
- Place all remaining ingredients in a food processor. Pulse until the arugula is cut into small pieces and all ingredients are well mixed. Transfer to a mixing bowl.
- Add the potatoes to the bowl and toss to coat. Serve warm.
