Turkey Stir-Fry
This is a great way to use leftover turkey in a fun dish. It would work equally well with chicken, too.
Ingredients
- Meat & Marinade
- 1/4 cup rice vinegar
- 1/2 cup soy sauce
- 1/2 cup chicken stock
- 3 tbsp sugar
- 1 tsp crushed red pepper
- 2-3 tbsp thinly chopped green onions
- 1 tbsp sweet chili sauce
- 400g cooked turkey breast, cut into bite-size pieced
- Stir-fry
- 2 bell peppers, cut into strips
- 1 sweet onion, cut into strips
- 2-3 stalks of celery, chopped
- 2-3 cloves garlic
- Minced ginger, to taste
- 3/4 cup frozen edamame, thawed
- Cooked white rice
Directions
- Combine all the marinade ingredients. Add the meat. Seal in container or plastic bag and leave in fridge to marinate for at least four hours.
- Heat some oil in your wok. Stir fry the peppers, onion, and celery. Add ginger, garlic, and edamame and fry for an additional 5-6 minutes.
- Add meat and marinade. (Since the meat was already cooked, the marinade is safe to eat)
- Stir fry until meat is warmed through. If needed, thicken the sauce with some cornstarch dissolved in cool water.
- Serve over hot rice.
