A surprisingly easy meal, this chicken breast has been covered with cornmeal and then served with tomato-peach salsa and a side of yankee cornbread. You can make this faster then you think and have a tasty dinner in no time.
Ingredients
- Salsa
- 5 medium peaches, peeled and chopped
- 1 large tomato, chopped
- 1/4 cup chopped fresh cilantro
- 3 tbsp vegetable oil
- 2 tbsp white vinegar
- 1/4 tsp salt
- Chicken
- 1/2 cup yellow cornmeal
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 boneless chicken breasts
- 2 tbsp vegetable oil
Directions
- Mix all salsa ingredients. Refrigerate.
- Mix cornmeal, salt, and pepper. Coat chicken.
- In skillet, heat oil. Cook chicken in oil for 15-20 minutes.
