I was sitting around on a sunday morning trying to figure out what to cook for dinner that night. I surfed the web, checked out a few recipes, and finally came up with this idea. It's a conglomeration of ideas from several places, and turned out to have pretty good flavour.
Ingredients
- 3/4 lb asparagus, trimmed and cut into 2-inch pieces
- 1 red pepper, cut into thin strips
- 1 jalapeno, finely chopped
- 3/4 lb shrimp, cooked, peeled, and deveined
- 1 garlic clove, minced
- Grated peel from one lime
- Juice from two limes
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- Corn starch
- Hot cooked white rice
Directions
- Simmer asparagus and red pepper in shallow water until tender crisp.
- Drain water. Add jalapeno and shrimp. Keep warm over low heat.
- Combine garlic, lime peel, lime juice, soy sauce, and oyster sauce. Simmer over medium-low heat. Thicken with corn starch in cold water. (Sauce will still be thin)
- Serve vegetables over cooked rice. Pour lime sauce over top. Enjoy!
