It tastes even better then it looks, if you can believe that.
Ingredients
- 1 lb frozen strawberries, thawed
- 1/2 cup sugar
- 1 tbsp cornstarch
- 1 lb of lady fingers
- 2 packages (8 oz each) cream cheese
- 3/4 cup sugar
- 2 tsp vanilla
- 1 pint heavy whipping cream
- 1 kiwi
- Fudge frosting
Directions
- Place thawed strawberries in saucepan. Add sugar and cornstarch. Cook over low heat until it turns into a thick sauce. Remove from heat and let cool.
- Whip the cream cheese, sugar, and vanilla together.
- In separate bowl, whip the cream until stiff peaks form. Fold into the cream cheese mixture.
- Arrange lady fingers vertically in a 9-inch springform pan. This was by far the toughest part, so once you get past this it's clear sailing. Try to keep them straight -- if they end up diagonal then it'll make it difficult to serve at the end.
- Line lady fingers in the bottom of the pan.
- Pour 1/2 of cream cheese filling onto lady fingers. Arrange a layer of lady fingers in the middle. If desired, you can put a layer of strawberries on top of the lady fingers.
- Pour remaining cream cheese mixture on top of lady fingers.
- Spread a layer of strawberry sauce over top of cream cheese.
- Peel and slice the kiwi. Arrange over top.
- Decorate with fudge frosting.
- Serve with extra strawberry sauce.
