I brought two loaves of this bread into work and they were gone in under 30 minutes. So someone thinks it tastes good...

Yield: 2 loaves + 12 muffins
Ingredients
- 2 1/2 cups sugar
- 1 cup butter, softened
- 4 eggs
- 7 bananas
- 1 cup buttermilk
- 2 tsp vanilla
- 5 cups flour
- 2 tsp baking soda
- 2 tsp salt
- 1 bag (12 oz) mini chocolate chips
Directions
- Cream sugar and butter. Add eggs and mix well.
- Add bananas and mash. Add buttermilk and vanilla and mix well.
- Add in flour, baking soda, and salt. Mix by hand.
- It's important to not overmix. Overmixing will cause the muffins to not rise properly. Mix just long enough to get the dry ingredients moistened.
- Add in mini chocolate chips and stir just until mixed.
- Put paper liners in muffin pan and fill 3/4 full.
- Grease bottoms only of 2 bread pans. Divide batter evenly between each.
- For loaves: Bake at 350ºF for 65-75 minutes, until toothpick comes out clean.
- For muffins: Bake at 400ºF for 20-25 minutes, until toothpick comes out clean.
