Cinnamon-Nut Tube Cake

This is a quick way to spruce up a cake mix and make it a little more interesting.  It doesn't require a lot of time and makes a very nice cake.


Ingredients


  • Cake
    • 1 yellow cake mix (18.25 oz)
    • 3/4 cup sour cream
    • 1/4 cup yogurt
    • 1/4 cup sugar
    • 1/4 cup water
    • 4 eggs
  • Filling
    • 1/2 cup chopped pecans
    • 1/2 cup raisins
    • 2 tbsp brown sugar
    • 2 tbsp ground cinnamon
  • Icing
    • 1 cup confectioners' sugar
    • 2 tbsp milk

Directions


  1. Combine all cake ingredients and mix well.
  2. In separate bowl, combine all ingredients for the filling and mix well.
  3. Grease and flour a tube pan.  Pour 1/2 - 2/3 of the batter into the pan.  Sprinkle with the filling, and then top with the remaining batter.
  4. Bake at 375ºF for 45-55 minutes.  Cool on wire rack.
  5. Before serving, combine the confectioners' sugar and milk until smooth.  Drizzle over the cake.  Enjoy!
