Yield: 48 brownies (depending on how you cut them)
Ingredients
- Brownies
- 1/2 lb. butter, softened
- 1 3/4 cups sugar
- 1 cup creamy peanut butter
- 2 eggs
- 1 egg yolk
- 2 tsp vanilla
- 2 cups flour
- 1/4 tsp salt
- 1 1/2 cups semi-sweet chocolate chips
- Ganache
- 1/2 cup cream
- 1 1/2 cups semi-sweet chocolate chips
- 1 tbsp butter, softened
Directions
- For brownies, cream together the butter and sugar. Add the peanut butter and mix well.
- Add the eggs, egg yolk, and vanilla and blend well. Mix in the flour and salt just until combined. Mix in the chocolate chips.
- Grease a 9x13 baking pan. Line the bottom with parchment paper and grease the paper.
- Spread the batter in the baking pan. Bake at 350°F for 35-45 minutes. Cool completely on a wire rack.
- For ganache, heat the cream in a small saucepan until it's boiling. Place the chocolate chips in a bown and pour the cream over top.
- Wait 1 minute while the chocolate heats up. Add the butter and whisk vigorously until smooth. Spread over the brownies.
- Cut into squares. I did eight rows, six per row.
