I've lately been on a bit of a soup kick, and this recipe struck me as both easy and interesting. I'd never cooked lentils before, and it turns out that you can have both easy and tasty.

Ingredients
- 4 1/2 cups water
- 4 medium carrots, sliced
- 1 medium onion, chopped
- 2/3 cup dried lentils
- 1 can (6 oz.) tomato paste
- 2 tbsp chopped fresh parsley
- 1 tbsp brown sugar
- 1 tbsp cider vinegar
- 1 tsp garlic salt
- 1 tsp dried thyme
- 1/2 tsp dill weed
- 1/2 tsp dried tarragon
- 1/4 tsp black pepper
Directions
- In large pot, combine the water, carrots, onion, and lentils. Simmer for 30 minutes.
- Add the remaining ingredients. Bring to a boil. Reduce the heat and simmer for another 20 minutes.
- Serve hot.
