This is super easy and super tasty. This is great because it serves a lot of people for not much effort and has great flavor. You can experiment with additional spices and toppings (flaked coconut is also good).

Ingredients
- 1 lb beef, cubed
- 1 can (14.5 oz.) petite diced tomatoes
- 1 onion, chopped
- 1 green pepper, chopped
- 1 yellow pepper, chopped
- 1 red pepper, chopped
- 1 1/2 tbsp curry powder
- 1/2 tsp salt
- 2/3 cup peanuts
- Cooked rice
- Green onioins, chopped (to taste)
- Banana, sliced (to taste)
- Raisins (to taste)
Directions
- In a large saucepan, combine the beef, tomatoes, onion, peppers, curry, and salt. Cover and simmer for 90-120 minutes (until the beef is cooked). Add peanuts when there's about 20 minutes left.
- Serve curry over cooked rice. Top with green onions, banana slices, and raisins. Serve hot.
