Peanut Butter & Chocolate Banana Bread

I love banana bread, and it can be hard to find variations on the classic so that you don't get bored.  Here's a good one that I really like.

Yield: 3 loaves or 36 muffins

Ingredients

  • Bread
    • 2 1/2 cups sugar
    • 1/2 cup butter, softened
    • 1/2 cup peanut butter
    • 4 eggs
    • 1 cup buttermilk
    • 2 tsp vanilla
    • 5-6 large bananas
    • 1 cup chocolate chips
    • 5 cups flour
    • 2 tsp baking soda
    • 2 tsp salt
  • Icing
    • 4 tbsp milk
    • 5 tbsp peanut butter
    • 1 1/3 cups powdered sugar

Directions

  1. Cream together the sugar, butter, and peanut butter.  Beat in the eggs, buttermilk, vanilla, bananas, and chocolate chips.
  2. Add the flour, baking soda, and salt.  Stir just until mixed.
  3. Grease the bottoms only of three bread pans and divide the batter evenly.  Alternatively, place three dozen paper liners into muffin tins and fill.
  4. Bake loaves at 350°F for 60-75 minutes.  Bake muffins at 400°F for 20-25 minutes.
  5. Cool on a wire rack.
  6. For icing, mix all three ingredients together.  Pipe into a pattern on the bread as shown in pictures.
