Rice Pudding

My father would make this family recipe as a treat for breakfast on the weekends.  In retrospect, it's more of a dessert than breakfast, but maybe that's why it was such a treat.

Yield: 10 servings


Ingredients


  • Rice
    • 2 cups dry rice
    • 2 cups water
    • 2 cups milk
  • Pudding
    • 4 cups milk
    • 3 tbsp butter
    • 1 1/2 tsp vanilla
    • 1 tsp ground nutmeg
    • 4 tbsp sugar
    • 1 1/2 cups raisins (adjust to taste)
    • Heavy whipping cream

Directions


  1. In a large pot, combine the dry rice, water, and two cups milk.  Cook on low heat stirring occasionally until the rice is cooked.
  2. Add all the pudding ingredients to the cooked rice.  Simmer over medium-low heat for 20-30 minutes.
  3. Serve hot with the cream.
