Peanut Butter Macadamia Nut Banana Bread

Banana bread is a staple food for me to make, and as such I'm always on the lookout for a new variation to try.  This recipe was made with some leftovers in my cabinet and I dare say it turned out pretty well.

Yield: 3 loaves


Ingredients


  • 2 1/2 cups sugar
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 4 eggs
  • 6 bananas, mashed
  • 1 cup milk
  • 2 tsp vanilla
  • 5 cups flour
  • 2 tsp baking soda
  • 2 tsp salt
  • 1 cup coarsely chopped macadamia nuts

Directions


  1. Cream together the sugar, butter, and peanut butter.  Mix in the eggs, bananas, milk, and vanilla until well blended.
  2. Add the flour, baking soda and salt.  Stir just until moistened.  Fold in the nuts.
  3. Grease the bottoms-only of three bread pans.  Divide the batter evenly between the three pans.
  4. Bake at 350°F for 50-70 minutes, until a toothpick in the center comes out clean.
  5. Cool on a wire rack.
