Spiced Banana Muffins

Yet another variation on banana bread, this one has a spiced taste that is a little unusual.  If you've got a few bananas sitting around and you're looking to change it up a little, give this a shot.

Yield: 16 muffins

Ingredients


  • 4 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tbsp spiced rum
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1/8 tsp salt
  • 1 tsp baking soda
  • 1 1/2 cups flour

Directions


  1. In a large mixing bowl, stir together the mashed bananas and butter.  Stir in the sugar, egg, vanilla and rum.  Add the spices and mix well.
  2. Stir in the salt, baking soda, and flour just until moistened.
  3. Divide the batter evenly amongst 16 muffin tins that have been lined with paper liners.
  4. Bake at 400°F for 15-20 minutes, until a toothpick stuck in the middle comes out clean.
  5. Cool on a wire rack.
