We wanted a way to mix fruit with our kabobs, and found this lime marinade for the chicken that gives it a wonderful flavor.

Ingredients
- Marinade
- 1 cup oil
- 1/2 cup red wine vinegar
- Juice & zest of 3 limes
- 1 tbsp chili powder
- 1 1/2 tsp paprika
- 1 1/2 tsp onion powder
- 5 cloves garlic, minced
- 1 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
- 3 large chicken breasts, about 2 lbs
- Vegetables
- 1 large red bell pepper
- 1 large yellow bell pepper
- 1 large onion
- 1 zucchini
- 2 limes
- 1 cantaloupe
- 1 can pineapple slices
- 1 lb mushrooms
Directions
- In a large bowl, combine all of the marinade ingredients. Pour into a sealable bag.
- Cut the chicken into 2" chunks. Add to the marinade. Seal and refrigerate overnight.
- If using wooden skewers, soak them in water for an hour.
- Cut the peppers, zucchini, limes, cantaloupe, and pineapple into large pieces.
- Assemble the kabobs using all the vegetables and the chicken.
- Cook over medium heat on the grill for 8-12 minutes until the chicken is fully cooked.
- Serve hot right off the grill.
