They're muffins. With lemon. And poppy seeds. What's not to like?

Ingredients
- 1/2 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 3/4 cup sour cream
- 1/4 cup lemon juice
- 3/4 tsp lemon oil
- 1 tsp vanilla
- Zest of one large lemon
- 2 cups flour
- 1 tsp baknig powder
- 1 tsp baking soda
- 1/4 tsp salt
- 2 tbsp poppy seeds
- Yellow sanding sugar, if desired
Directions
- Cream together the butter and sugar. Mix in the eggs. Mix in the sour cream, lemon juice, lemon oil, vanilla, and zest.
- Gradually mix in the flour, baking powder, baking soda, salt, and poppy seeds just until moistened. Do not overmix.
- Pour into muffin tin that's either greased & floured or lined with paper liners. Sprinkle with yellow sanding sugar. Bake at 375°F for 11-14 minutes, until a toothpick inserted in the center comes out clean.
- Cool on a wire rack.
