Ingredients
- 4 oz. slab bacon
- 3 tbsp Thai chili pepper paste
- 2 bags (12 oz. each) frozen peas
Directions
- Cube the slab bacon into 1/4 inch pieces.
- If you can't find slab bacon, get thick-cut bacon and cut it into pieces.
- Pan fry the bacon over low heat until the fat has rendered out and you have crispy bacon cubes. About 10 minutes.
- Do not drain the bacon fat!
- Add the Thai chili pepper paste and mix with the fat in the bottom of the pan.
- Increase the temperature. Add the frozen peas, cover, and cook until they are fully cooked through.
- Serve hot.
