Ingredients
- 1 tsp olive oil
- 2 tbsp butter
- 12 oz. chopped, cooked pork belly
- Unsalted pork belly would be better, but our grocery store doesn't stock it
- You could use thick-cut bacon cut into pieces if you can't find pork belly
- 1/2 cup chopped green onions
- 2 big handfuls of mustard greens, torn into large pieces
- 4 cups peas (defrosted and drained, if using frozen peas)
- Juice of 1 lemon (~2 tbsp)
- 1 tsp sugar
- 1/4 tsp salt
- Omit if you used salted pork belly
- 1 tsp minced garlic
Directions
- Add the olive oil and butter to a pan, and warm until the butter is melted. Add the chopped bacon, green onions, and mustard greens. Cover and cook until the greens are wilted.
- Add the remaining ingredients. Cook until the peas are warmed through and everything is mixed together.
- Serve hot.
