Yield: 8 Servings
Ingredients
- 8 chicken breasts
- Salt & pepper
- 1 package (5.2 oz.) Boursin cheese, softened
- 8 oz. goat cheese, softened
- 1 cup shredded mozzarella
- 8 slices prosciutto
Directions
- Flatten each chicken breast to 1/4-inch thickness. Pat dry, and sprinkle liberally w/ salt & pepper.
- Mix the Boursin and goat cheeses together. Divide between the eight chicken breasts, placing at the end of each breast. Sprinkle some mozzarella over the soft cheeses, and then roll-up each chicken breast.
- Wrap each chicken breast in a slice of prosciutto. Place in a casserole dish, seam-side down.
- Bake covered at 400°F for 30-35 minutes.
- Serve hot.
