Baked Gnocchi with Vodka Sauce

Yield: 4 servings

Ingredients

  • Vodka Sauce
    • 2 tbsp butter
    • 2 cloves garlic, minced
    • 1 can tomato sauce (6 oz.)
    • 1/4 cup vodka
    • 1 cup heavy whipping cream
    • 1 cup chicken broth
    • 1 tsp salt
  • Gnocchi
    • Approximately 3 cups homemade gnocchi
    • 1/2 cup shredded mozzarella
    • 1/2 cup grated Parmesan cheese
    • Fresh parsley, chopped  (or basil)

Directions

  1. For the sauce, heat butter in an oven-safe pan over medium heat.  Add the garlic and saute.
  2. Add tomato paste and cook for 2 minutes.  Add the vodka and cook for another 2 minutes.
  3. Add the cream, broth, and salt.  Bring to a low simmer until the sauce thickens and coats the back of a spoon.  Remove from the heat.
  4. Cook the gnocchi in boiling water until they float to the surface.  Strain from the water, and add the gnocchi to the sauce.
  5. Sprinkle mozzarella and Parmesan over the top, and bake for 8 minutes at 500°F.
  6. Remove from the oven.  Serve immediately and sprinkle with fresh parsley.
