Ingredients
- 4.5 lbs. sirloin beef roast
- 1 tbsp salt
- 1 tbsp pepper
Directions
- Use butcher's twine to tie the roast.
- Here's a video if you don't know how to do that.
- Mix together the salt and pepper. Generously sprinkle over the roast to give it a good coating.
- Let the roast rest uncovered in the refrigerator for 6-8 hours.
- Put the spit through your roast, and use the forks to secure it in place. Let rest at room temperature while the grill warms up.
- Get your rotisserie up to about 425°F. Put the roast on the rotisserie for 30 minutes.
- Reduce the heat down to about 300°F and continue cooking. Cook until you reach desired internal temperature, keeping in mind that it'll cook an additional 5 degrees while resting.
- Every grill will be a little different. For mine, it took about 65-80 minutes for a 4.5 lb. roast.
- Pro-tip: Cut up some vegetables and put them on a roasting tray until the beef. The drips will flavor the veggies.
- Remove the roast from the rotisserie. Cover with aluminum foil and let rest for 15-30 minutes.
- Remove the spit. Slice and enjoy.
