Autumn Corn Salad

Yield: 6 servings

Ingredients

  • 4 1/2 cups corn
    • If frozen, thaw and drain
    • If canned, drain
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup crumbled feta
  • 1/2 large red onion, finely chopped
  • 1/4 cup basil, thinly sliced
  • 3 tbsp olive oil
  • 1 tbsp lime juice
  • Salt, to taste
  • Black pepper, to taste

Directions

  1. Toss together the corn, tomatoes, feta, onion, oil, and lime juice.
  2. Add the salt and pepper, and stir to mix together.
  3. Serve
