Yield: 2 quiches, 4 servings each
Ingredients
- Pastry for two crusts
- 1 lb. pork sausage
- 5 eggs
- 1/2 cup milk
- 1/3 cup mayonnaise
- 1 tsp salt
- 1 tsp pepper
- 2 cups shredded cheddar cheese
- 3 jalapenos, diced
- 5 green onions, chopped
Directions
- Prepared the pastry dough and line two pie plates. Line with aluminum foil and bake at 400°F for 10 minutes. Remove the foil and bake for 5 more minutes.
- Cook the pork in a large skillet until it's no longer pink. Drain the fat.
- In a mixing bowl, combine the eggs, milk, mayonnaise, salt, and pepper. Add the cheese, jalapenos, green onions, and pork. Mix well and then pour into the two prepared crusts.
- Bake at 400°F for 30-35 minutes. If needed to prevent overbrowning, cover the edges with aluminum foil for the last 15 minutes.
- Cool for 10 minutes before serving.
