Eggnog Rice Pudding

Yield: 6 servings

Ingredients

  • 2 cups cooked white rice
  • 1 1/2 cups milk
  • 1 1/2 cups eggnog
  • 2/3 cup sugar
  • 1/4 tsp salt
  • 1 tsp vanilla
  • Serving
    • Additional Eggnog
    • Nutmeg

Directions

  1. Combine the rice, milk, eggnog, sugar, salt, and vanilla in a pot.  Bring to a boil, reduce heat, and simmer covered until most of the moisture is absorbed by the rice, about 45 minutes.
  2. Serve warm in ramekins, with a some additional eggnog.  Sprinkle with nutmeg.
