Yield: ~80 bites
Ingredients
- 2 packages mac & cheese, plus ingredients to prepare
- 3/4 cup grated parmesan
- 2/3 cup flour
- 1 tsp black pepper
- 6 eggs
- 1 tbsp salt
- 3/4 cup water
- 4 cups panko breadcrumbs
- Oil for frying.
Directions
- Prepare the mac & cheese according to package directions. Mix in the grated parmesan.
- Spread the mac & cheese into a 9" x 9" baking pan. Let cook completely, then cover and refrigerate until fully cooled.
- Using a silicone baking pan will make the removal much easier.
- In a small bowl, combine the flour and black pepper.
- Remove the mac & cheese from the pan and cut into 1" squares. Roll the cubes in the flour mixture, then place in an airtight container. Cover and refrigerate until ready to cook.
- To make the egg wash, whisk together the eggs, salt, and water.
- Pour the panko breadcrumbs into a bowl.
- Heat the oil in a cast iron skillet to 350°F.
- Take the floured bites and dip in:
- Egg wash
- Panko breadcrumbs
- Egg wash
- Panko breadcrumbs
- I prefer to do in batches of 8-12 at a time. Place them into the oil to begin frying. Using tongs, flip over when the bottom side is browned.
- When done frying, transfer to a baking sheet in a warm oven to keep warm while you continue frying more.
- When done, serve warm.
