Ingredients
- 1 box brownie mix, plus ingredients to prep it.
- 1 carton (1.75 qt) ice cream
- Use whatever flavor you'd like. I used Cookies and Cream.
- Step #3 will be easier if you get ice cream in a square block. I.e., not a rounded cylinder or other shape.
Directions
- Prepare the brownie batter according to package directions. Bake in an 8" x 8" baking pan. Cool completely and refrigerate to harden.
- Cut the brownies into a 4x4 grid, yielding 16 brownies. Slice each in half horizontally, creating a "top" and "bottom."
- Using a sharp knife and cutting board, cut the ice cream into "slabs" approximately 3/4" thick. Cut each slab into squares the same size and the brownies. Build a sandwich out of each brownie.
- I initially tried cutting through the box with a serrated knife. While it worked, it was a pain. Instead, I would recommend removing all the ice cream from the package as a single block, and then slicing off slabs.
- Wrap the brownies in plastic wrap and return to the freezer until ready to serve.
- Serve frozen directly from the freezer.
