Ingredients
- 3 lbs. ground beef
- 3/4 tsp baking soda
- Olive oil
- 2 large poblano peppers, petite diced
- 2 large white onions, petite diced
- Pinch of salt
- Spices
- 3 tsp salt
- 4 1/2 tsp onion powder
- 3 tsp garlic powder
- 3 tsp black pepper
- 5 1/4 tsp paprika
- 1/4 tsp crushed red pepper
- 5 tbsp flour
- 9 tbsp tomato paste
- 9 tbsp ketchup
- 6 tbsp dijon mustard
- 7 1/2 tsp brown sugar
- 1/2 cup + 1 tbsp worcestershire suace
- 4 1/2 tbsp red wine vinegar
- 4 1/2 tsp beef bullion
- 2 1/2 cups beef stock
- 2 drops liquid smoke

Directions
- Mix together the beef and baking soda. Set aside.
- Warm some oil in a large pot and add the poblano peppers, onions, and a pinch of salt. Saute until they start to take on some color.
- Add in the beef and cook until browned and broken down into small pieces. Add the seasonings and cook for another 30 seconds.
- Add in the flour and stir together. Add all remaining ingredients and bring to a simmer. Reduce heat and simmer until reduced.
- Serve on toasted buns.
