Ingredients
- Stir Fry
- Coconut oil, for frying
- 1 cup thinly sliced shallots
- 10 cloves garlic
- 2 jalapenos, petite diced
- 2 poblanos, petite diced
- 16 oz. ground chicken
- We used ground turkey. Either one will work.
- Red bell pepper, petite diced
- 1 cup Thai basil.
- Sauce
- 1/4 cup soy sauce
- 2 tbsp maple syrup
- 2 tsp Sriracha sauce
- 2 tbsp oyster sauce
- 2 tbsp fish sauce
- Cooked rice
- Garnish
- Sliced green onions
- Thai basil leaves
- Sesame seeds
- 4 fried eggs
Directions
- Heat a skillet with some coconut oil for frying. Add the shallots and fry until softened.
- Add the garlic & peppers. Fry for 30 seconds.
- Add the meat and red bell pepper. Fry until the meat is cooked through.
- While the meat is cooking, mix the sauce ingredients in a mixing bowl.
- Add the Thai basil and sauce to the meat. After one minute, turn off the heat and continue stirring until the basil begins to wilt.
- Serve hot over rice. Garnish with sliced green onions, more basil, sesame seeds, and a fried egg.
