Ingredients
- 6 cups (28 oz.) frozen corn
- 3 tbsp olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp minced green onions
- 3/4 tsp salt
- 1/4 tsp pepper
- 2 cups (1 pint) blueberries
- 5 oz. crumbled feta cheese
- Additional green onions for garnish.
Directions
- Cook the corn according to package directions. Drain the water and place in a mixing bowl.
- Add the remaining ingredients. Toss to coat.
- Serve with additional green onions as garnish on top.
