Ingredients
- Sweet potatoes
- 3 lbs. sweet potatoes, 1" dice
- 4 tbsp coconut oil, melted
- Salt, to taste
- Pepper, to taste
- Topping
- 5 tbsp butter, melted
- 2/3 cup brown sugar
- 1/2 cup flour
- 1 tsp cinnamon
- 1/4 tsp salt
- Apples
- 3 large apples, 1" dice
- 1 tsp cinnamon
- 1 tbsp coconut oil, melted
Directions
- Place the sweet potatoes on a baking sheet that's been lined with aluminum foil. Drizzle the coconut oil over the sweet potatoes, and then sprinkle with salt and pepper. Bake at 400°F for 25-30 minutes. The potatoes should reach ~75% done.
- For the topping, combine all the ingredients in a mixing bowl and toss with a fork. You aren't aiming for a fully homogenous mixture, just tossed together.
- If it's too wet, you can add a bit more flour.
- Transfer the sweet potatoes to a 9x13 casserole dish. Add the apples on top, and then sprinkle with cinnamon and drizzle with the coconut oil. Spread the topping over the casserole.
- Bake at 375°F for 30 minutes, until the apples are tender and the topping is golden brown.
- Serve hot.
