Strawberry Guacamole

Yield: ~4 cups guacamole


Ingredients

  • 1 cup balsamic vinegar
  • 4 ripe avocadoes
  • 3.5 oz. crumbed goat cheese, divided
  • 1 1/2 cups petite diced strawberries, divided
  • 1/3 cup chopped fresh cilantro
  • 1/3 cup chopped red onion
  • 1 jalapeno, seeded and finely diced
  • 2 tbsp lime juice
  • Salt & pepper to taste
  • Tortilla chips

Directions

  1. Place the balsamic in a small saucepan.  Bring to a low simmer, and continue until it has thickened.  About 8-12 minutes.  Remove from the heat and let cool.
  2. Place the avocado flesh in a bowl.  Smash with a potato masher.  A few chunks spots will remain.
  3. Stir in 1.5 oz. of crumbled goat cheese, 3/4 cup strawberries, cilantro, red onion, jalapeno, lime juice, salt, and pepper.
  4. Transfer to serving bowl.  Top with remaining goat cheese and strawberries.  Drizzle with 2-3 tbsp balsamic vinegar reduction.
  5. Serve with tortilla chips.
