Yield: ~4 cups guacamole
Ingredients
- 1 cup balsamic vinegar
- 4 ripe avocadoes
- 3.5 oz. crumbed goat cheese, divided
- 1 1/2 cups petite diced strawberries, divided
- 1/3 cup chopped fresh cilantro
- 1/3 cup chopped red onion
- 1 jalapeno, seeded and finely diced
- 2 tbsp lime juice
- Salt & pepper to taste
- Tortilla chips
Directions
- Place the balsamic in a small saucepan. Bring to a low simmer, and continue until it has thickened. About 8-12 minutes. Remove from the heat and let cool.
- Place the avocado flesh in a bowl. Smash with a potato masher. A few chunks spots will remain.
- Stir in 1.5 oz. of crumbled goat cheese, 3/4 cup strawberries, cilantro, red onion, jalapeno, lime juice, salt, and pepper.
- Transfer to serving bowl. Top with remaining goat cheese and strawberries. Drizzle with 2-3 tbsp balsamic vinegar reduction.
- Serve with tortilla chips.
