Yield: 16 servings (2 pieces per serving)
Ingredients
- 4 large peaches
- 16 oz. thick-cut bacon
- 32 fresh basil leaves
- Balsamic reduction
Directions
- Cut each peach in half. Remove the pits, and then cut each half into 4 pieces each. You should now have 32 sections.
- Cut your bacon in half.
- Wrap each peach wedge in a basil leaf, followed by a half strip of bacon. Pin in place with a toothpick.
- Grill over low heat until the bacon is cooked, about 15-20 minutes.
- Serve warm, drizzled with balsamic reduction.
If you've never made a balsamic reduction, just put some balsamic vinegar in a small saucepan over low heat and gently simmer for 8-12 minutes. Remove from the heat and let cool. It should be thickened but still retain the strong acidic flavor.
